  • 2 tablespoons Shallots, finely minced
  • 1 clove Garlic, minced
  • 0.25 cup Dry white wine or cognac
  • 0.5 cup Heavy cream
  • 2 tablespoons Dijon mustard
  • 1 tablespoon Fresh parsley, chopped (optional, for garnish)

Directions

Step 1

Pat the steaks dry with a paper towel and season both sides with the salt and black pepper.

Step 2

Heat a large skillet over medium-high heat. Add the olive oil and let it heat until shimmering.

Place the steaks in the skillet and sear for 3-4 minutes per side for medium-rare, or longer for desired doneness. Adjust cooking time based on steak thickness. Remove the steaks from the skillet and set them aside to rest on a plate, loosely covered with foil.
