Ingredients

  • 6 pieces Flour tortillas (6-inch)
  • 1 lb Ground beef
  • 2 tbsp Taco seasoning
  • 0.25 cup Water
  • 1 cup Shredded cheddar cheese
  • 1 cup Black beans (drained and rinsed)
  • 1 cup Sweet corn (drained)
  • 0.5 cup Cherry tomatoes (diced)
  • 1 large Avocado (diced)
  • 0.25 cup Sour cream
  • 2 tbsp Cilantro (chopped)
  • 1 piece Lime (cut into wedges)
  • 1 can Cooking spray

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Lightly spray both sides of the flour tortillas with cooking spray. Press each tortilla into the cups of a standard muffin tin to form a bowl shape. Bake in the preheated oven for 10 minutes, or until crisp and golden brown. Remove and let cool.

Step 3

While the tortilla cups are baking, heat a large skillet over medium heat. Add the ground beef and cook until browned, breaking it apart with a wooden spoon, about 5-7 minutes.

Drain any excess grease from the skillet and stir in the taco seasoning and 1/4 cup of water. Simmer for 2-3 minutes, then remove from heat.
