  • 2 pieces Whole wheat tortillas
  • 3 pieces Large eggs
  • 2 cups Fresh spinach
  • 0.5 cup Roasted red bell pepper, chopped
  • 0.5 cup Feta cheese, crumbled
  • 2 tablespoons Sun-dried tomato paste
  • 1 tablespoon Olive oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

In a medium-sized bowl, whisk the eggs together with the salt and black pepper until well combined.

Heat the olive oil in a large non-stick skillet over medium heat.
