Ingredients

  • 1 cup Unsalted butter
  • 1.5 cups Light brown sugar
  • 0.25 cup Granulated sugar
  • 2 teaspoons Vanilla extract
  • 2 large Eggs
  • 1.75 cups All-purpose flour
  • 1 teaspoon Baking soda
  • 0.5 teaspoon Salt
  • 2 cups Old-fashioned rolled oats
  • 1 can (14 ounces) Sweetened condensed milk
  • 2 cups Semisweet chocolate chips
  • 2 tablespoons Unsalted butter (for fudge layer)
  • 1 teaspoon Vanilla extract (for fudge layer)
  • 0.25 teaspoon Salt (for fudge layer)

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a 9x13-inch baking pan with parchment paper, leaving some overhang for easy removal.

Step 2

In a large mixing bowl, cream the 1 cup of unsalted butter, brown sugar, and granulated sugar together using a hand or stand mixer until light and fluffy, about 2-3 minutes.

Step 3

Add the 2 teaspoons of vanilla extract and the eggs, one at a time, beating well after each addition.

Step 4

In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.

Step 5

Gradually add the dry ingredients to the wet mixture, mixing just until combined. Then fold in the rolled oats with a spatula.

Step 6

Press two-thirds of the oat mixture evenly into the prepared baking pan, reserving the remaining dough for later use.

Step 7

To make the fudge layer, place the sweetened condensed milk, semisweet chocolate chips, 2 tablespoons of butter, 1 teaspoon of vanilla extract, and 1/4 teaspoon of salt in a medium saucepan over medium-low heat.

Step 8

Stir continuously until the mixture is smooth and glossy, about 5 minutes. Remove from heat.

Step 9

Pour the chocolate fudge filling evenly over the oat layer in the prepared pan and spread it out with a spatula until fully covered.

Step 10

Dollop the reserved oat mixture over the fudge layer in small clumps, gently pressing them in slightly.

Step 11

Bake in the preheated oven for 23-25 minutes, or until the top is golden brown and the edges have set.

Step 12

Remove from the oven and let cool in the pan on a wire rack for at least 2 hours before slicing into bars.

Step 13

Cut into 16 squares and serve. Store leftovers in an airtight container at room temperature for up to 4 days or refrigerate for longer storage.
