  • 500 grams Star fruit (carambola)
  • 1 tablespoon Salt
  • 4 tablespoons Sugar
  • 125 milliliters White vinegar
  • 125 milliliters Water
  • 1 teaspoon Mustard seeds
  • 1 teaspoon Fenugreek seeds
  • 1 teaspoon Turmeric powder
  • 1 teaspoon Red chili flakes
  • 4 units Garlic cloves (sliced thinly)
  • 1 tablespoon Fresh ginger (julienned)

Directions

Step 1

Wash the star fruit thoroughly and pat dry. Slice them thinly crosswise into star-shaped pieces, discarding any seeds.

Step 2

Place the sliced star fruit in a large bowl and sprinkle with 1 tablespoon of salt. Toss to combine. Let it sit for 30 minutes to release excess moisture. Drain the released liquid and transfer the star fruit to a clean, dry bowl.

In a small saucepan, combine white vinegar, water, and sugar. Heat over medium heat, stirring occasionally, until the sugar dissolves completely. Remove from heat and let the brine cool slightly.
