Ingredients

  • 4 pieces Star fruit (carambola)
  • 0.5 cups White sugar
  • 2 tablespoons Apple cider vinegar
  • 1 teaspoon Fresh ginger
  • 2 cloves Garlic
  • 0.5 teaspoons Red chili flakes
  • 0.25 teaspoons Ground cinnamon
  • 1 pinch Ground cloves
  • 0.5 teaspoons Salt
  • 0.25 cups Water

Directions

Step 1

Wash the star fruit thoroughly under running water. Slice off the edges of the ridges if needed and cut the star fruit into small dice-sized pieces, discarding any seeds.

Step 2

Peel the garlic cloves and grate the ginger. Set both aside.

Step 3

In a medium-sized saucepan, combine the diced star fruit, sugar, apple cider vinegar, grated ginger, minced garlic, red chili flakes, ground cinnamon, ground cloves, salt, and water.

Step 4

Bring the mixture to a boil over medium heat while stirring occasionally to dissolve the sugar.

Step 5

Once boiling, reduce the heat to low and let the mixture simmer uncovered for about 20-25 minutes, stirring occasionally to prevent sticking. The star fruit should soften, and the mixture will thicken to a jam-like consistency.

Step 6

Taste the chutney and adjust the seasoning if needed by adding more sugar for sweetness or a pinch of salt for balance.

Step 7

Remove the chutney from heat and let it cool slightly before transferring it to a clean, airtight jar.

Step 8

Store the chutney in the refrigerator for up to 2 weeks. Serve chilled or at room temperature as a condiment for grilled meats, sandwiches, or cheese platters.
