  • 240 grams All-purpose flour
  • 2 teaspoons Baking powder
  • 0.5 teaspoons Baking soda
  • 0.5 teaspoons Salt
  • 1 teaspoon Ground cinnamon
  • 2 large Eggs
  • 120 milliliters Vegetable oil
  • 1 teaspoon Vanilla extract
  • 60 milliliters Milk
  • 50 grams Walnuts (optional, chopped)
  • 10 grams Powdered sugar (optional, for garnish)

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease and lightly flour a standard 9x5-inch loaf pan and set it aside.

Step 2

Rinse the star fruits and pat them dry. Trim off the edges and tips, then cut them into small pieces. Remove any seeds and puree the pieces in a blender or food processor until smooth. You should yield about 1 cup of star fruit puree.

In a large mixing bowl, combine the granulated sugar, brown sugar, eggs, vegetable oil, milk, and vanilla extract. Whisk until the mixture is smooth and well blended.
