Ingredients

  • 300 grams semisweet chocolate chips
  • 60 grams unsalted butter
  • 200 grams multicolored mini marshmallows
  • 1 teaspoon vanilla extract
  • 50 grams shredded sweetened coconut
  • 1 sheet parchment paper

Directions

Step 1

In a medium-sized saucepan, melt the semisweet chocolate chips and unsalted butter over low heat, stirring constantly to avoid burning. Once fully melted and smooth, remove from heat.

Step 2

Stir in the vanilla extract and let the chocolate mixture cool for about 5-7 minutes. This prevents the marshmallows from melting when added.

Step 3

In a large mixing bowl, combine the multicolored mini marshmallows with the cooled chocolate mixture. Gently fold until all the marshmallows are evenly coated in chocolate.

Step 4

Lay out a sheet of parchment paper on a flat surface. Sprinkle the shredded sweetened coconut evenly over the parchment paper to create a thin bed.

Step 5

Scoop the marshmallow and chocolate mixture onto the coconut-covered parchment paper, forming it into a log approximately 2-3 inches in diameter. Use the parchment paper to gently roll and tighten the log shape, pressing it firmly but carefully.

Step 6

Wrap the parchment paper tightly around the log and twist the ends to seal it. Refrigerate for at least 2 hours, or until the log is firm and set.

Step 7

Once chilled, unwrap the log and slice it into ½-inch thick rounds. The slices will resemble colorful stained glass windows.

Step 8

Serve immediately or store in an airtight container in the refrigerator for up to a week.
