  • 3 cloves garlic (minced)
  • 2 medium carrots (sliced)
  • 2 stalks celery (sliced)
  • 3 medium potatoes (peeled and cubed)
  • 1 cup green beans (trimmed and cut into 1-inch pieces)
  • 14.5 ounces canned diced tomatoes
  • 6 cups beef broth
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 cup frozen peas
  • 2 tablespoons fresh parsley (chopped)

Directions

Step 1

Heat the olive oil in a large Dutch oven or stockpot over medium-high heat.

Season the stew beef with salt and black pepper. Add the beef to the pot and brown on all sides, about 5 minutes. Remove the beef and set aside.
