Ingredients

  • 2 pieces Boneless, skinless chicken breasts
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 tablespoon Olive oil
  • 3 tablespoons Unsalted butter
  • 3 tablespoons All-purpose flour
  • 2 cups Chicken broth
  • 0.5 cup Heavy cream
  • 1.5 cups Shredded cheddar cheese
  • 2 cups Frozen mixed vegetables (peas, carrots, corn, and green beans)
  • 1 teaspoon Dried thyme
  • 2 pieces Pie crust (store-bought or homemade)
  • 1 large Egg
  • 1 tablespoon Water

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Season the chicken breasts with salt and pepper on both sides.

Step 3

Heat the olive oil in a large skillet over medium heat. Add the chicken breasts and sear for 4-5 minutes per side until golden brown and cooked through. Remove from skillet, let them cool slightly, and then shred into bite-sized pieces.

Step 4

In the same skillet, melt the butter over medium heat. Add the flour and whisk continuously for 1-2 minutes to create a roux.

Step 5

Slowly pour in the chicken broth while whisking to avoid lumps. Cook for 2-3 minutes, allowing the mixture to thicken slightly.

Step 6

Stir in the heavy cream, shredded cheddar cheese, and dried thyme. Continue stirring until the cheese is fully melted and the sauce is smooth and creamy. Season to taste with additional salt and pepper if needed.

Step 7

Add the shredded chicken and frozen mixed vegetables to the cheese sauce. Stir well to combine and remove from heat.

Step 8

Roll out one pie crust and place it in a 9-inch pie dish, pressing it into the bottom and sides.

Step 9

Pour the chicken and cheese mixture into the prepared pie crust, spreading it evenly.

Step 10

Top with the second pie crust, sealing the edges by crimping them together with your fingers or a fork.

Step 11

In a small bowl, whisk together the egg and water to create an egg wash. Brush the top pie crust with the egg wash to help it achieve a golden-brown finish.

Step 12

Cut 3-4 small slits in the top crust to allow steam to escape while baking.

Step 13

Place the pie dish on a baking sheet to catch any drips, and bake in the preheated oven for 35-40 minutes, or until the crust is golden brown and the filling is bubbling.

Step 14

Remove from the oven and allow the pie to cool for 5-10 minutes before slicing and serving. Enjoy!
