Ingredients

  • 1 lb Ground beef
  • 2 tbsp Taco seasoning
  • 0.25 cup Water
  • 8 Small flour tortillas
  • 2 cups Shredded cheddar cheese
  • 1 cup Refried beans
  • 0.5 cup Sour cream
  • 1 cup Shredded lettuce
  • 1 cup Diced tomatoes
  • 0.5 cup Sliced black olives
  • 2 tbsp Vegetable oil

Directions

Step 1

Heat a large skillet over medium heat. Add the ground beef and cook until browned, breaking it into small crumbles with a spoon, about 6-8 minutes.

Step 2

Drain any excess grease from the skillet. Stir in the taco seasoning and water, mixing thoroughly. Simmer for 2-3 minutes, then remove from heat.

Step 3

Heat the refried beans in a small saucepan or microwave until warm and easy to spread.

Step 4

In a clean nonstick skillet over medium heat, add 1 teaspoon of vegetable oil and heat until shimmering. Place a flour tortilla in the skillet and cook for 1-2 minutes until golden and slightly crisp on one side. Repeat with the remaining tortillas, using more oil as needed.

Step 5

On a work surface, start stacking your tacos: Place one tortilla down, spread a thin layer of refried beans, then a layer of seasoned beef, followed by a generous sprinkle of shredded cheddar cheese.

Step 6

Top with another tortilla and repeat the process to create layers. Aim for two layers per stack, finishing with a final tortilla on top.

Step 7

Return each taco stack to the skillet over medium-low heat to warm through and lightly melt the cheese, about 1-2 minutes per side. Carefully flip using a spatula.

Step 8

Remove the stacker tacos and allow them to rest for 1-2 minutes. Cut into quarters if desired.

Step 9

Top each stacker taco with sour cream, shredded lettuce, diced tomatoes, and sliced black olives. Serve warm and enjoy!
