  • 0.25 cup Chopped green onions (optional, for garnish)

Directions

Step 1

Preheat the oven to 375°F (190°C). Grease a 9x13-inch baking dish lightly with oil or non-stick spray.

Step 2

Heat 2 tablespoons of oil in a skillet over medium heat. Lightly fry each corn tortilla for about 10 seconds per side to soften them. Set aside on paper towels to drain any excess oil.

Spread 1/2 cup of enchilada sauce evenly across the bottom of the prepared baking dish.
