Preheat your oven to 375°F (190°C).
Heat a large skillet over medium heat and add the vegetable oil. Once the oil is warm, lightly fry each corn tortilla for about 10 seconds on each side until they’re pliable but not crispy. Transfer to a plate lined with paper towels to drain excess oil.
Spread 1/4 cup of enchilada sauce over the bottom of a 9x13-inch baking dish to prevent sticking.
Place one tortilla in the prepared baking dish. Top with about 2 tablespoons of enchilada sauce, sprinkling 2-3 tablespoons of shredded cheddar cheese and Monterey Jack cheese evenly over the top. Scatter about 1 tablespoon of diced onion on top of the cheese.
