Ingredients

  • 1 pound Ground beef
  • 1 medium Yellow onion, finely chopped
  • 3 cloves Garlic, minced
  • 1 packet (1 ounce) Taco seasoning
  • 1 can (16 ounces) Refried beans
  • 1 cup Salsa
  • 5 large (10-inch) Flour tortillas
  • 2 cups Shredded Mexican blend cheese
  • 1 cup Chopped tomatoes (optional)
  • 0.5 cup Sliced black olives (optional)
  • 0.25 cup Chopped fresh cilantro (optional, for garnish)
  • 0.5 cup Sour cream (optional, for serving)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

In a large skillet over medium heat, cook the ground beef until browned, breaking it apart with a wooden spoon, about 8 minutes. Drain any excess fat.

Step 3

Add the chopped onion and cook for 3-4 minutes until softened. Stir in the minced garlic and cook for an additional minute until fragrant.

Step 4

Sprinkle the taco seasoning over the beef mixture and stir to coat. Add 1/4 cup of water and cook for another 2 minutes, letting the flavors meld.

Step 5

Spread a thin layer of salsa (about 2 tablespoons) on the bottom of a large, oven-safe skillet or a round baking dish.

Step 6

Place one tortilla on top of the salsa layer to form the base of your pie.

Step 7

Spread 1/4 of the refried beans over the tortilla, followed by 1/4 of the beef mixture, a sprinkle of cheese, and a layer of salsa. Repeat the layering process with three more tortillas.

Step 8

Top the pie with the final tortilla. Spread the remaining salsa over the top and sprinkle the rest of the cheese evenly.

Step 9

Optionally, scatter chopped tomatoes and sliced black olives over the top for additional flavor and presentation.

Step 10

Cover the dish loosely with aluminum foil and bake in the preheated oven for 20 minutes.

Step 11

Remove the foil and bake for an additional 5-10 minutes, or until the cheese is fully melted and bubbly.

Step 12

Remove the dish from the oven and allow the pie to cool for 5 minutes before garnishing with chopped cilantro, slicing, and serving.

Step 13

Serve warm with a dollop of sour cream on the side, if desired.
