Ingredients

  • 1 can (15 oz) black beans
  • 0.5 cup rolled oats
  • 0.25 cup breadcrumbs
  • 0.5 medium, finely diced red bell pepper
  • 0.25 medium, finely diced red onion
  • 2 cloves, minced garlic
  • 1 teaspoon ground cumin
  • 0.5 teaspoon paprika
  • 1.5 tablespoons soy sauce
  • 1 tablespoon barbecue sauce
  • 1 tablespoon olive oil
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 4 pieces burger buns
  • 0 as needed (lettuce, tomato, avocado, etc.) desired toppings

Directions

Step 1

Drain and rinse the black beans thoroughly. Pat them dry with a paper towel to remove excess moisture, then mash them in a large bowl. Leave some chunks for texture.

Step 2

In a food processor, pulse the rolled oats until they resemble coarse breadcrumbs. Add the oats and regular breadcrumbs to the mashed beans.

Step 3

Add the finely diced red bell pepper, red onion, and minced garlic to the mixture. Stir to incorporate.

Step 4

Season the mixture with ground cumin, paprika, salt, and black pepper. Add soy sauce and barbecue sauce for flavor and moisture.

Step 5

Using your hands, mix the ingredients until well combined. The mixture should hold together when pressed. If it's too wet, add a little more breadcrumbs; if it's too dry, add a small amount of water or more barbecue sauce.

Step 6

Divide the mixture into 4 equal portions and shape each into a patty about 1/2-inch thick.

Step 7

Heat olive oil in a large skillet over medium heat. Once the oil is hot, place the patties in the skillet and cook for about 4-5 minutes per side, until golden brown and slightly crisp. Be gentle when flipping to avoid breaking the patties.

Step 8

Toast the burger buns in the skillet or oven for a minute or two, if desired.

Step 9

Assemble the burgers by placing a cooked veggie patty on the bottom half of each bun. Add your desired toppings such as lettuce, tomato, avocado, or vegan mayo, then cover with the top bun.

Step 10

Serve immediately and enjoy Stacey E's Yummy Veggie Burgers!
