Ingredients

  • 6 large russet potatoes
  • 3 cups sharp cheddar cheese
  • 2 cups sour cream
  • 1 can cream of chicken soup
  • 1 stick unsalted butter
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1.5 cups Ritz crackers
  • 0.5 stick unsalted butter (melted)

Directions

Step 1

Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish.

Step 2

Peel the russet potatoes, then cut them into bite-sized cubes. Boil the potato cubes in salted water for 10-12 minutes or until they are just tender. Drain the potatoes well and set aside.

Step 3

In a large mixing bowl, combine the sour cream, cream of chicken soup, 1 stick of melted butter, garlic powder, onion powder, salt, and black pepper. Stir until smooth.

Step 4

Add the boiled potato cubes and 2 1/2 cups of shredded cheddar cheese to the mixture in the bowl. Gently stir to coat the potatoes evenly.

Step 5

Transfer the potato and cheese mixture into the prepared 9x13-inch baking dish, spreading it out into an even layer.

Step 6

In a separate bowl, crush the Ritz crackers into crumbs. Mix the crumbs with 1/2 stick of melted butter until well combined.

Step 7

Sprinkle the remaining 1/2 cup of cheddar cheese over the potato mixture in the baking dish. Then, evenly distribute the buttery Ritz cracker topping over the cheese layer.

Step 8

Place the dish in the preheated oven and bake for 45-50 minutes, or until the top is golden brown and bubbling.

Step 9

Remove from the oven and let the cheesy potatoes cool for 5-10 minutes. Serve warm and enjoy!
