Ingredients

  • 4 large Eggs
  • 1 cup Bean sprouts
  • 0.5 cup Diced onion
  • 0.25 cup Diced green bell pepper
  • 0.5 cup Cooked small shrimp (optional)
  • 1 teaspoon Soy sauce
  • 2 tablespoons Vegetable oil
  • 2 tablespoons Mayonnaise
  • 4 pieces Lettuce leaves
  • 4 pieces Tomato slices
  • 4 pieces Pickle slices
  • 4 slices White sandwich bread
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Pepper

Directions

Step 1

In a medium mixing bowl, crack the eggs and beat them with a fork or whisk until completely blended.

Step 2

Stir in the bean sprouts, diced onion, diced green bell pepper, cooked shrimp (if using), soy sauce, salt, and pepper. Mix until well combined.

Step 3

Heat 1 tablespoon of vegetable oil in a medium-sized nonstick skillet over medium heat.

Step 4

Pour half the egg mixture into the skillet and gently spread it out into a round patty, about the size of your sandwich bread.
