Ingredients

  • 3 pounds corned beef brisket
  • 2 tablespoons pickling spice (often included with corned beef)
  • 10 cups water
  • 1 yellow onion, peeled and quartered
  • 4 garlic cloves, smashed
  • 4 small to medium carrots, peeled and cut into 2-inch pieces
  • 6 small red potatoes, halved if large
  • 1 head green cabbage, cut into wedges
  • 2 tablespoons unsalted butter (optional, for serving)
  • 2 tablespoons flat-leaf parsley, chopped (optional, for garnish)

Directions

Step 1

Rinse the corned beef brisket under cold water to remove excess brine and place it in a large Dutch oven or stockpot.

Step 2

Add the pickling spice, water, onion, and garlic to the pot. Ensure the brisket is fully submerged. If needed, add more water to cover.

Step 3

Bring the pot to a boil over high heat, then reduce to a simmer. Cover the pot with a lid and cook for 3 hours, or until the brisket is tender and easily pierced with a fork.

Step 4

After 3 hours, add the carrots and potatoes to the pot. Cover and simmer for an additional 30 minutes.

Step 5

Add the cabbage wedges to the pot and cook for another 15-20 minutes, or until the cabbage is tender but not falling apart.

Step 6

Carefully remove the brisket from the pot and let it rest on a cutting board for 10 minutes before slicing against the grain into thin slices.

Step 7

Using a slotted spoon, transfer the vegetables to a serving platter. Optionally, drizzle melted butter over the veggies for added flavor.

Step 8

Place the sliced corned beef on the platter alongside the vegetables, garnish with chopped parsley if desired, and serve immediately.
