Ingredients

  • 300 grams spaghetti (or fettuccine)
  • 150 grams fresh spinach leaves
  • 15 grams basil leaves
  • 50 grams parmesan cheese, grated
  • 2 garlic cloves
  • 3 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 100 milliliters heavy cream
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 2 liters water for boiling pasta

Directions

Step 1

Bring 2 liters of water to a boil in a large pot. Add a generous pinch of salt.

Step 2

Cook the spaghetti or fettuccine according to the package instructions until al dente. Reserve 1 cup of pasta water before draining, then set the pasta aside.

Step 3

In a large pan, heat 2 tablespoons of olive oil over medium heat. Add the garlic cloves (minced) and sauté for 1 minute until fragrant.

Step 4

Add the spinach leaves and basil to the pan. Stir frequently until the spinach wilts and becomes tender, about 2-3 minutes.

Step 5

Transfer the wilted spinach and basil mixture to a blender or food processor. Add 1 tablespoon of olive oil, lemon juice, half of the Parmesan cheese, and a few tablespoons of the reserved pasta water. Blend until smooth and vibrant green.
