Ingredients

  • 1 cup Unsalted butter, softened
  • 1 cup Granulated sugar
  • 0.5 cup Brown sugar, packed
  • 1 large Egg
  • 1 teaspoon Vanilla extract
  • 0.5 teaspoon Almond extract
  • 2.25 cups All-purpose flour
  • 1 3.4 oz box Instant pistachio pudding mix
  • 1 teaspoon Baking soda
  • 0.5 teaspoon Salt
  • 5 drops Green food coloring (optional)
  • 0.75 cup Shelled pistachios, chopped
  • 0.75 cup White chocolate chips

Directions

Step 1

Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper or silicone baking mats.

Step 2

In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy, about 2-3 minutes.

Step 3

Add the egg, vanilla extract, and almond extract to the butter mixture. Beat until fully combined.

Step 4

In a separate bowl, whisk together the all-purpose flour, instant pistachio pudding mix, baking soda, and salt.

Step 5

Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Step 6

Stir in the green food coloring (if using) to give the dough a festive green hue.

Step 7

Fold in the chopped pistachios and white chocolate chips until evenly distributed throughout the dough.

Step 8

Using a cookie scoop or a spoon, drop tablespoon-sized portions of dough onto the prepared baking sheets, leaving about 2 inches of space between each cookie.

Step 9

Bake in the preheated oven for 8-10 minutes or until the edges are set but the centers are still soft.

Step 10

Remove from the oven and let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.

Step 11

Store the cookies in an airtight container at room temperature for up to 5 days or freeze for longer storage.
