Ingredients

  • 2 tablespoons olive oil
  • 1 pound ground beef
  • 1 large onion
  • 2 medium carrots
  • 2 celery stalks
  • 2 garlic cloves
  • 2 tablespoons all-purpose flour
  • 1 tablespoon tomato paste
  • 1.5 cups beef broth
  • 0.5 cup Guinness stout or other dark beer
  • 1 tablespoon Worcestershire sauce
  • 1 cup frozen peas
  • 1 teaspoon fresh thyme leaves
  • 4 large russet potatoes
  • 4 tablespoons butter
  • 0.5 cup milk
  • 1 cup cheddar cheese, shredded
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Peel and dice the potatoes into even pieces for boiling.

Step 3

Place the potatoes in a pot, cover them with water, and add a pinch of salt. Bring to a boil, reduce to a simmer, and cook for 15-20 minutes until tender.

Step 4

While the potatoes cook, heat 2 tablespoons of olive oil in a large skillet or sauté pan over medium heat.

Step 5

Add the ground beef to the pan and cook until browned, breaking it apart with a wooden spoon. Remove the beef and set it aside.

Step 6

In the same pan, add diced onion, carrots, and celery. Cook for about 5-7 minutes until softened.

Step 7

Add minced garlic, cooking for 1 minute until fragrant, then stir in the flour and tomato paste. Cook for 1-2 minutes to remove the raw taste of the flour.

Step 8

Slowly pour in the beef broth and Guinness, deglazing the pan by scraping up any browned bits from the bottom. Stir until the mixture thickens slightly.

Step 9

Return the beef to the pan and stir in Worcestershire sauce, peas, and thyme. Season with salt and pepper to taste. Let the filling simmer on low heat for 10 minutes.

Step 10

Once the potatoes are cooked, drain them and mash them with butter, milk, shredded cheddar cheese, and a pinch of salt and pepper until smooth and creamy.

Step 11

Transfer the beef and vegetable filling to a greased 9-inch pie dish or baking dish, spreading it evenly.

Step 12

Spread the mashed potato mixture over the filling, ensuring it completely covers the meat layer.

Step 13

Place the dish in the preheated oven and bake for 25-30 minutes, or until the top is golden and the filling is bubbling at the edges.

Step 14

Let the pie cool for 5-10 minutes before serving. Enjoy your St. Patrick's Pie!
