Ingredients

  • 2.5 cups All-purpose flour
  • 1.75 cups Granulated sugar
  • 2 tablespoons Unsweetened cocoa powder
  • 1 teaspoon Baking soda
  • 0.5 teaspoon Salt
  • 1 cup Vegetable oil
  • 1 cup Buttermilk
  • 2 pieces Large eggs
  • 1 teaspoon White vinegar
  • 2 teaspoons Vanilla extract
  • 1 teaspoon Green gel food coloring
  • 0.5 cup Unsalted butter (for frosting)
  • 8 ounces Cream cheese (for frosting)
  • 4 cups Powdered sugar (for frosting)
  • 1 teaspoon Vanilla extract (for frosting)
  • 1 pinch Pinch of salt (for frosting)

Directions

Step 1

Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans. Line the bottoms with parchment paper for easy removal.

Step 2

In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking soda, and salt.

Step 3

In a separate medium mixing bowl, combine the vegetable oil, buttermilk, eggs, vinegar, vanilla extract, and green food coloring. Whisk until well blended.

Step 4

Gradually add the wet mixture to the dry ingredients, stirring with a spatula until the batter is smooth and no lumps remain.

Step 5

Divide the batter evenly between the prepared cake pans and smooth the tops with a spatula.

Step 6

Bake the cakes in the preheated oven for 28-30 minutes, or until a toothpick inserted into the center of the cakes comes out clean.

Step 7

Let the cakes cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.

Step 8

While the cakes cool, prepare the frosting: beat the cream cheese and unsalted butter together in a large bowl until smooth and fluffy.

Step 9

Add the powdered sugar, 1 cup at a time, beating well with each addition. Stir in the vanilla extract and a pinch of salt until the frosting is creamy and spreadable.

Step 10

Once the cakes are completely cool, level the tops with a serrated knife if needed. Place one layer on a serving plate and spread a thick layer of frosting on top.

Step 11

Top with the second cake layer and frost the top and sides evenly. Decorate with sprinkles, shamrock-shaped decorations, or piped frosting if desired.

Step 12

Refrigerate the cake for 20-30 minutes before slicing to allow the frosting to set. Serve and enjoy your festive St. Patrick's Green Velvet Cake!
