Ingredients

  • 200 grams All-purpose flour
  • 1 tablespoon Baking powder
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 200 grams Mashed potatoes
  • 100 grams Cheddar cheese, shredded
  • 2 stalks Green onions, finely chopped
  • 2 large Eggs
  • 120 milliliters Milk
  • 60 grams Unsalted butter, melted

Directions

Step 1

Preheat your oven to 200°C (400°F) and line a 12-cup muffin tin with paper liners or grease it lightly.

Step 2

In a large mixing bowl, combine the flour, baking powder, salt, and black pepper. Stir until well mixed.

Step 3

In a separate bowl, whisk together the mashed potatoes, eggs, milk, and melted butter until smooth.

Step 4

Pour the wet ingredients into the bowl with the dry ingredients and mix gently until just combined. Do not overmix.

Step 5

Fold in the shredded cheddar cheese and chopped green onions until evenly distributed in the batter.

Step 6

Scoop the batter evenly into the prepared muffin tin, filling each cup about 3/4 full.

Step 7

Bake the muffins in the preheated oven for 20-25 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean.

Step 8

Remove the muffins from the oven and let them cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.

Step 9

Serve warm or at room temperature. These muffins pair wonderfully with soups, stews, or even a dollop of sour cream for extra indulgence!
