Ingredients

  • 3 cups All-purpose flour
  • 2 teaspoons Baking powder
  • 0.5 teaspoons Baking soda
  • 1 teaspoons Ground cinnamon
  • 0.5 teaspoons Ground nutmeg
  • 0.5 teaspoons Salt
  • 0.5 cups Unsalted butter, softened
  • 0.75 cups Brown sugar, packed
  • 2 large Eggs
  • 1 cups Buttermilk
  • 1 teaspoons Vanilla extract
  • 1 cups Raisins
  • 0.5 cups Dried cranberries
  • 0.5 cups Chopped walnuts (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment paper.

Step 2

In a large mixing bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Set aside.

Step 3

In another large bowl, cream together the softened butter and brown sugar using a hand mixer or stand mixer until light and fluffy, about 2-3 minutes.

Step 4

Add the eggs one at a time, beating well after each addition.

Step 5

Mix in the buttermilk and vanilla extract until well combined.

Step 6

Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.

Step 7

Fold in the raisins, dried cranberries, and walnuts (if using) with a spatula until evenly distributed.

Step 8

Pour the batter into the prepared loaf pan and smooth the top with the back of a spoon or spatula.

Step 9

Bake in the preheated oven for 45-50 minutes, or until a toothpick inserted into the center of the loaf comes out clean.

Step 10

Remove the bread from the oven and let it cool in the pan for 10 minutes. Then carefully transfer it to a wire rack to cool completely.

Step 11

Slice and serve the bread plain or spread with butter for a delightful St. Patrick's Day treat!
