Ingredients

  • 2 cups Sharp cheddar cheese
  • 1 cup Gruyère cheese
  • 2 tablespoons Cornstarch
  • 1 cup Irish stout beer (e.g., Guinness)
  • 1 clove Minced garlic
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • 0.25 teaspoons Ground black pepper
  • 2 drops Green food coloring (optional)
  • 4 cups Cubed Irish soda bread
  • 2 cups Steamed broccoli florets
  • 2 cups Sliced apples
  • 2 cups Cooked baby potatoes

Directions

Step 1

Grate the cheddar and Gruyère cheeses into a large bowl and toss them with the cornstarch until evenly coated. Set aside.

Step 2

In a medium saucepan or fondue pot, add the Irish stout beer and minced garlic. Heat over medium heat until the beer is warm and begins to simmer, but do not let it boil.

Step 3

Lower the heat to medium-low and gradually add small handfuls of the cheese mixture to the beer, stirring constantly with a wooden spoon or silicone spatula. Allow each handful to melt fully before adding more cheese.

Step 4

Once all the cheese has been incorporated and the mixture is smooth, stir in the Dijon mustard, Worcestershire sauce, and ground black pepper. If desired, add two drops of green food coloring to give the fondue a festive St. Patrick's Day touch.

Step 5

Transfer the fondue to a heated fondue pot to keep it warm or continue serving from the saucepan, maintaining a low heat.

Step 6

Arrange the cubed Irish soda bread, steamed broccoli florets, sliced apples, and cooked baby potatoes on a serving platter around the fondue pot.

Step 7

Serve immediately by dipping the bread, vegetables, and fruit into the warm cheese mixture. Enjoy the festive flavors with friends and family!
