Ingredients

  • 2 cups granulated sugar

  • 0.5 cup unsalted butter (for mint layer)
  • 3 cups powdered sugar
  • 3 tablespoons milk
  • 1 teaspoon peppermint extract
  • 4 drops green food coloring
  • 1 cup semi-sweet chocolate chips
  • 4 tablespoons unsalted butter (for ganache)

Directions

Step 1

Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking pan or line it with parchment paper.

Step 2

In a large saucepan, melt 1 cup of butter over low heat. Once melted, stir in the granulated sugar until combined.

Step 3

Remove the saucepan from the heat, and whisk in the eggs one at a time. Stir in the vanilla extract.

Step 4

Add the flour, cocoa powder, and salt to the wet ingredients, mixing until just combined.

Step 5

Pour the brownie batter into the prepared pan and spread it evenly. Bake for 25-30 minutes or until a toothpick inserted into the center comes out with a few moist crumbs. Allow to cool completely in the pan.

For the mint layer, beat 0.5 cup of butter in a mixing bowl until creamy. Gradually mix in the powdered sugar, milk, and peppermint extract until smooth. Add the green food coloring and mix until the frosting is evenly colored.

Spread the mint frosting evenly over the cooled brownies. Place the pan in the refrigerator to set for about 20 minutes.

For the ganache, melt the chocolate chips and 4 tablespoons of butter in a microwave-safe bowl in 20-second intervals, stirring in between until smooth.

Pour the ganache over the chilled mint frosting layer, spreading it out evenly.

Step 10

Refrigerate the brownies again for at least 30 minutes or until the ganache is set. Once chilled, cut into squares and serve.
