Ingredients

  • 3 pounds Corned beef brisket
  • 4 cups Water
  • 1 large Yellow onion
  • 5 medium Carrots
  • 6 medium Red potatoes
  • 1 head Cabbage
  • 4 whole Garlic cloves
  • 2 whole Bay leaves
  • 1 tablespoon Peppercorns
  • 1 teaspoon Mustard seed
  • 0.5 teaspoon Ground black pepper

Directions

Step 1

Rinse the corned beef brisket under cold running water to remove excess brine and pat it dry with paper towels.

Step 2

Peel and quarter the onion, then peel and cut the carrots into large chunks. Halve the red potatoes. Set these vegetables aside.

Step 3

Peel the garlic cloves and leave them whole.

Step 4

Cut the cabbage into wedges, removing the tough core while keeping the leaves attached for easier serving.

Step 5

In a large slow cooker, place the corned beef brisket fat-side up.

Step 6

Add the garlic cloves, bay leaves, peppercorns, mustard seed, and ground black pepper over the brisket.

Step 7

Pour the 4 cups of water into the crockpot, ensuring the brisket is partially submerged.

Step 8

Add the onion, carrots, and potatoes around the brisket in the slow cooker.

Step 9

Cover the slow cooker with the lid and set it to cook on low heat for 8 hours or until the brisket is tender and easily shredded with a fork.

Step 10

After 6.5 hours of cooking, carefully open the lid and place the cabbage wedges on top of the brisket and vegetables. Replace the lid and continue cooking for the remaining 1.5 hours.

Step 11

Check for doneness: The cabbage should be tender but not mushy, and the vegetables should be fork-tender.

Step 12

Carefully remove the brisket from the crockpot and let it rest on a cutting board for 10 minutes. Slice it against the grain into thin slices.

Step 13

Serve the corned beef with the cooked cabbage, carrots, potatoes, and onions. Ladle a bit of the cooking broth over the top for added flavor.
