Rinse the corned beef brisket under cold running water to remove excess brine and pat it dry with paper towels.
Peel and quarter the onion, then peel and cut the carrots into large chunks. Halve the red potatoes. Set these vegetables aside.
Peel the garlic cloves and leave them whole.
Cut the cabbage into wedges, removing the tough core while keeping the leaves attached for easier serving.
In a large slow cooker, place the corned beef brisket fat-side up.
