Ingredients

  • 2.5 cups All-purpose flour
  • 1.5 cups Granulated sugar
  • 2 tablespoons Unsweetened cocoa powder
  • 1 teaspoon Baking soda
  • 0.5 teaspoons Salt
  • 1.5 cups Canola or vegetable oil
  • 1 cup Buttermilk
  • 2 units Large eggs
  • 1 teaspoon White vinegar
  • 2 teaspoons Vanilla extract
  • 2 teaspoons Green food coloring
  • 8 ounces Cream cheese, softened
  • 0.5 cup Unsalted butter, softened
  • 4 cups Powdered sugar
  • 1 teaspoon Vanilla extract (for frosting)

Directions

Step 1

Preheat your oven to 350°F (175°C) and line two 12-count muffin tins with cupcake liners.

Step 2

In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, cocoa powder, baking soda, and salt until well combined.

Step 3

In another large bowl, mix the canola oil, buttermilk, eggs, vinegar, vanilla extract, and green food coloring until smooth and uniform in color.

Step 4

Gradually add the wet ingredients to the dry mixture, stirring gently with a spatula or hand mixer until no lumps remain. Be careful not to overmix.

Step 5

Divide the batter evenly among the cupcake liners, filling each about two-thirds full.

Step 6

Bake in the preheated oven for 16-18 minutes, or until a toothpick inserted into the center of a cupcake comes out clean.

Step 7

Remove the cupcakes from the oven and allow them to cool in the tins for 5 minutes before transferring to a wire rack to cool completely.

Step 8

While the cupcakes are cooling, prepare the cream cheese frosting by beating the softened cream cheese and butter together in a large bowl until smooth and creamy.

Step 9

Gradually add the powdered sugar, 1 cup at a time, mixing well after each addition. Stir in the vanilla extract.

Step 10

Once the cupcakes are completely cooled, use a piping bag or offset spatula to frost each cupcake with the cream cheese frosting.

Step 11

Optionally, decorate with festive sprinkles or edible glitter for an extra St. Patrick's Day touch.
