Ingredients

  • 1 medium head cauliflower
  • 1 medium yellow onion

  • 3 tablespoons all-purpose flour
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 1 cup cheddar cheese, shredded
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 teaspoon nutmeg
  • 1 loaf French baguette
  • 6 slices cheddar cheese, sliced

Directions

Step 1

Wash and chop the cauliflower into small florets. Peel and finely dice the onion, carrot, and celery. Mince the garlic.

Step 2

In a large pot, melt the butter with the olive oil over medium heat. Add the onion, carrot, celery, and garlic. Cook for 5-6 minutes until the vegetables are soft but not browned.
