Ingredients

  • 1 cup Water
  • 0.5 cup Unsalted butter
  • 0.25 teaspoon Salt
  • 1 cup All-purpose flour
  • 4 Large eggs
  • 1 cup Ricotta cheese
  • 0.5 cup Powdered sugar
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Orange zest
  • 4 cups Vegetable oil (for frying)
  • 0.25 cup Powdered sugar (for dusting)
  • 12 Maraschino cherries (optional, for garnish)

Directions

Step 1

In a medium saucepan, combine water, butter, and salt. Heat over medium heat until the butter is melted and the mixture begins to boil.

Step 2

Reduce the heat to low, add the flour all at once, and stir vigorously with a wooden spoon until the mixture pulls away from the sides of the pan and forms a smooth ball of dough (about 2-3 minutes).

Step 3

Remove the pan from the heat and let the dough cool for 5 minutes.

Step 4

Transfer the dough to a mixing bowl. Add the eggs one at a time, beating well after each addition until the dough is smooth and glossy.

Step 5

Heat vegetable oil in a deep saucepan or fryer to 375°F (190°C).

Step 6

Using a small ice cream scoop or two spoons, carefully drop tablespoon-sized portions of dough into the hot oil, frying in batches to avoid overcrowding. Cook until golden brown and puffed, about 6-8 minutes per batch, turning occasionally.

Step 7

Remove the cooked puffs with a slotted spoon and drain on a paper towel-lined plate. Cool completely.

Step 8

In a mixing bowl, combine ricotta cheese, powdered sugar, vanilla extract, and orange zest. Mix until smooth and creamy. Transfer the filling to a piping bag with a small round tip.

Step 9

Using a sharp knife, make a small hole in the side or bottom of each puff. Fill each puff with the ricotta mixture by inserting the piping tip and gently squeezing until filled.

Step 10

Dust the filled cream puffs generously with powdered sugar. Garnish with a maraschino cherry on top, if desired.

Step 11

Serve immediately or chill until ready to serve. Enjoy!
