  • 75 grams Manx honey
  • 125 milliliters Whole milk
  • 200 grams Condensed milk
  • 1 teaspoon Vanilla extract

Step 1

Grease a square 20cm baking tin and line it with parchment paper, ensuring some overhang for easy removal later.

In a heavy-bottomed saucepan, add the unsalted butter, caster sugar, Manx honey, whole milk, and condensed milk.

Turn the heat to low and stir continuously with a wooden spoon until the butter has melted and the sugar has dissolved.

Increase the heat to medium and bring the mixture to a gentle boil, then reduce the heat slightly to keep it at a low simmer.
