Ingredients

  • 4 pieces chicken breasts
  • 2 sheets puff pastry sheets
  • 200 grams cream cheese
  • 100 grams spinach leaves
  • 2 pieces garlic cloves
  • 2 tablespoons fresh parsley
  • 1 teaspoon lemon zest
  • 1 piece egg
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Preheat the oven to 200°C (392°F) and line a baking tray with parchment paper.

Step 2

Heat the olive oil in a skillet over medium heat. Add the garlic (minced) and spinach leaves. Sauté for 2-3 minutes until the spinach is wilted, then remove from heat and let it cool slightly.

Step 3

In a bowl, mix the cream cheese, sautéed spinach, chopped parsley, lemon zest, salt, and black pepper until well combined.

Step 4

Using a sharp knife, butterfly the chicken breasts by slicing them horizontally but not cutting all the way through. Open them like a book.

Step 5

Spoon about 2 tablespoons of the cream cheese mixture into the center of each chicken breast, then fold the chicken to enclose the filling.

Step 6

Cut each puff pastry sheet into 2 squares, making 4 squares in total. Place one filled chicken breast in the center of each square.

Step 7

Fold the corners of the pastry over the chicken to create a parcel, ensuring the edges are sealed tightly. Press them together with your fingers or the tines of a fork.

Step 8

Beat the egg in a small bowl and brush it over the top of each parcel to give them a golden finish.

Step 9

Place the parcels on the prepared baking tray and bake for 22-25 minutes, or until the pastry is golden brown, puffed up, and cooked through.

Step 10

Remove the chicken parcels from the oven and let them rest for 5 minutes before serving. Enjoy them warm with a side salad or roasted vegetables.
