  • 4 whole cloves
  • 3 whole cardamom pods
  • 1 teaspoon fennel seeds
  • 1 tablespoon coriander powder
  • 1 tablespoon chili powder
  • 0.5 teaspoon turmeric powder
  • 1 teaspoon garam masala
  • 0.5 teaspoon black pepper (freshly ground)
  • 2 tablespoons vegetable oil
  • 200 ml water
  • 1 teaspoon salt
  • 1 tablespoon lime juice
  • 2 tablespoons fresh cilantro (for garnish)

Directions

Step 1

Heat vegetable oil in a large pot over medium heat.

Step 2

Add the cinnamon stick, cloves, cardamom pods, fennel seeds, and curry leaves. Stir for 1-2 minutes until fragrant.

Add the chopped onion and sauté until golden brown, about 5 minutes.

Stir in the minced garlic and grated ginger. Cook for another 1-2 minutes until aromatic.
