Ingredients

  • 1 medium Green chili (sliced, adjust for spice level)
  • 4 medium Tomatoes (ripe and chopped)
  • 0.5 teaspoons Turmeric powder
  • 1 tablespoon Curry powder (preferably Sri Lankan curry powder)
  • 0.5 teaspoons Chili powder
  • 1 small Cinnamon stick
  • 200 milliliters Coconut milk
  • 100 milliliters Water
  • 1 tablespoon Lime juice
  • 1 teaspoon Salt
  • 2 tablespoons Fresh cilantro (chopped, for garnish)

Directions

Step 1

Heat the coconut oil in a large pan over medium heat.

Add the chopped onion and sauté for 2-3 minutes until softened.

Stir in the minced garlic, ginger, and green chili, and cook for another minute until fragrant.

Add the chopped tomatoes and cook for 5-7 minutes until they break down into a thick, saucy consistency.
