Ingredients

  • 500 grams Pineapple (ripe, peeled, and cubed)
  • 200 ml Coconut milk
  • 1 medium Onion (finely chopped)
  • 2 cloves Garlic (minced)
  • 8 leaves Curry leaves
  • 1 teaspoon Mustard seeds
  • 0.5 teaspoon Fenugreek seeds
  • 1 teaspoon Turmeric powder
  • 1 teaspoon Curry powder
  • 1 teaspoon Chili powder
  • 1 medium Green chili (sliced lengthwise)
  • 1 teaspoon Sugar
  • 1 teaspoon Salt
  • 2 tablespoons Vegetable oil
  • 100 ml Water

Directions

Step 1

Heat 2 tablespoons of vegetable oil in a deep pan over medium heat.

Step 2

Add mustard seeds and let them splutter. Then, add fenugreek seeds and let them roast for about 10 seconds.

Step 3

Add the chopped onion, minced garlic, curry leaves, and green chili to the pan. Sauté until the onions become translucent.

Step 4

Stir in turmeric powder, curry powder, and chili powder. Cook for about 1 minute to release the aromas of the spices.

Step 5

Add the pineapple cubes to the pan and mix well to coat them with the spices.

Step 6

Pour in 100 ml of water, cover the pan, and let it simmer for 10 minutes on low-medium heat until the pineapple softens slightly.

Step 7

Add 200 ml of coconut milk to the pan and stir gently to combine.

Step 8

Season with sugar and salt, adjusting to taste. Let the curry simmer uncovered for another 5 minutes until the sauce thickens slightly.

Remove from heat and let the curry rest for a few minutes before serving.
