  • 1 medium red bell pepper, diced
  • 2 stalks celery stalks, diced
  • 3 cloves garlic cloves, minced
  • 3 cups fresh corn kernels (from about 3 ears of corn)
  • 0.5 teaspoons cayenne pepper
  • 1 teaspoon thyme leaves, fresh
  • 1 cup chicken stock
  • 0.5 cup heavy cream
  • 2 stalks scallions, chopped (green parts only)
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon hot sauce (optional)

Directions

Step 1

Season the chicken thighs with kosher salt, black pepper, and smoked paprika on both sides.

Step 2

Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the chicken thighs, skin-side down, and sear for 4-5 minutes on each side until golden brown. Remove the chicken from the skillet and set aside.

Step 3

Reduce the heat to medium and add 2 tablespoons of unsalted butter to the skillet. Once melted, stir in the diced yellow onion, red bell pepper, and celery. Sauté for 4-5 minutes until softened.

Add the minced garlic and sauté for another 1 minute until fragrant.

Return the chicken thighs to the skillet to warm through for 2 minutes.
