  • 2.25 teaspoons Active dry yeast
  • 0.25 cups Honey
  • 0.25 cups Molasses
  • 3 tablespoons Vegetable oil
  • 1.5 teaspoons Salt
  • 2.5 cups Whole wheat flour
  • 2 cups Bread flour
  • 2 tablespoons Unsweetened cocoa powder
  • 2 tablespoons Cornmeal (for dusting)

Directions

Step 1

In a large mixing bowl, combine the warm water and active dry yeast. Let sit for 5-10 minutes until the yeast is foamy.

Step 2

Add the honey, molasses, vegetable oil, and salt to the bowl. Stir well to combine.

Step 3

Slowly mix in the whole wheat flour, bread flour, and cocoa powder. Mix until a shaggy dough forms.

Step 4

Turn the dough out onto a lightly floured surface and knead for 8-10 minutes, until the dough is smooth and elastic. Add small amounts of additional flour if needed to prevent sticking.

Place the dough in a lightly oiled bowl, turning once to coat, and cover with a clean kitchen towel or plastic wrap. Let rise in a warm place for 1-1.5 hours, or until doubled in size.
