Preheat your oven to 400°F (200°C).
Cut the butternut squash in half lengthwise and scoop out the seeds. Drizzle with 1 tablespoon of olive oil and place cut side down on a baking sheet lined with parchment paper. Roast for 30-35 minutes or until the flesh is fork-tender.
While the squash is roasting, rinse the quinoa under cold running water in a fine mesh strainer.
In a large pot, heat the remaining 1 tablespoon of olive oil over medium heat. Add the diced onion, minced garlic, carrots, and celery. Sauté for 5-7 minutes, stirring occasionally, until the vegetables are softened.
Add the vegetable broth, cumin, coriander, and bay leaf to the pot. Bring to a boil, then lower the heat to simmer.
Once the squash is done roasting, let it cool slightly. Scoop out the flesh and add it to the pot. Stir to combine and allow the mixture to simmer for 10 minutes.
Using an immersion blender, puree the soup until smooth. Alternatively, work in batches to blend the soup in a countertop blender, then return it to the pot.
Add the rinsed quinoa to the soup and simmer for 15 minutes or until the quinoa is fully cooked and tender.
Season with salt and black pepper to taste. Remove the bay leaf before serving.
Ladle the soup into bowls and garnish with chopped fresh parsley. Serve hot and enjoy!
