Ingredients

  • 2 pounds yellow squash
  • 1 large onion
  • 1 cup water
  • 1 teaspoon salt
  • 4 tablespoons unsalted butter
  • 1 cup sharp cheddar cheese
  • 2 large eggs
  • 1 cup sour cream
  • 1 cup mayonnaise
  • 1.5 cups Ritz crackers
  • 2 tablespoons parmesan cheese
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon garlic powder

Directions

Step 1

Preheat your oven to 350°F (175°C) and lightly grease a 9x13-inch casserole dish.

Step 2

Wash and slice the yellow squash into thin rounds and dice the onion.

Step 3

In a large pot, combine the squash, onion, water, and salt. Bring to a boil, then reduce the heat and simmer for 10 minutes until the squash is tender.

Step 4

Drain the squash and onion mixture thoroughly in a colander, pressing lightly to remove excess water. Set aside.

Step 5

In a large skillet, melt 2 tablespoons of butter over medium heat. Stir in the drained squash and onion and cook for 2-3 minutes to remove additional moisture.

Step 6

In a large mixing bowl, whisk together the eggs, sour cream, mayonnaise, black pepper, and garlic powder.

Step 7

Fold the cooked squash mixture into the egg mixture. Stir in the sharp cheddar cheese until evenly combined.

Step 8

In a separate bowl, crush the Ritz crackers into coarse crumbs. Melt the remaining 2 tablespoons of butter and mix into the crackers along with the Parmesan cheese.

Step 9

Spread the squash mixture evenly into the prepared casserole dish. Sprinkle the cracker topping evenly over the top.

Step 10

Bake in the preheated oven for 30-40 minutes or until the casserole is bubbly and the topping is golden brown.

Step 11

Remove from the oven and allow to cool for 5-10 minutes before serving.
