Ingredients

  • 5 medium yellow squash
  • 1 medium onion
  • 2 tablespoons butter
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper
  • 2 cups shredded cheddar cheese
  • 1 cup sour cream
  • 2 large eggs
  • 1 cup cracker crumbs
  • 0.5 cup grated Parmesan cheese
  • 2 tablespoons butter (melted)
  • 1 as needed cooking spray

Directions

Step 1

Preheat the oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish with cooking spray.

Wash and slice the yellow squash into 1/4-inch thick rounds. Peel and finely chop the onion.
