  • 2 stalks celery stalks, diced
  • 2 medium potatoes, diced
  • 1 medium zucchini, diced
  • 1 14-ounce can canned diced tomatoes (with juice)
  • 6 cups vegetable broth
  • 1 leaf bay leaf
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped
  • 1 cup optional frozen peas or corn

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the diced yellow onion and cook for 4-5 minutes, stirring occasionally, until softened and translucent.

Stir in the minced garlic and cook for another 1-2 minutes, until fragrant.

Step 4

Add the diced carrots, celery, and potatoes. Cook for 5 minutes, stirring occasionally, to soften slightly.
