Ingredients

  • 1 cup cooked lentils
  • 0.5 cup rolled oats
  • 0.5 cup walnuts
  • 0.5 medium, diced onion
  • 2 garlic cloves
  • 2 tablespoons ground flaxseed
  • 3 tablespoons water
  • 1.5 tablespoons soy sauce
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • 1 cup, shredded Brussels sprouts
  • 1 medium, shredded carrot
  • 2 teaspoons apple cider vinegar
  • 1 tablespoon olive oil
  • 4 burger buns
  • 0 optional toppings (lettuce, tomato, pickles, etc.)

Directions

Step 1

Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.

Step 2

In a small bowl, combine the ground flaxseed and water to make a flax egg. Let it sit for 5 minutes until it thickens.

In a food processor, pulse the rolled oats and walnuts until they form a coarse powder.
