Ingredients

  • 2 cups All-purpose flour
  • 1.5 cups Granulated sugar
  • 0.75 cups Unsalted butter, softened
  • 3 large Eggs
  • 1 cup Milk
  • 2 teaspoons Vanilla extract
  • 2 teaspoons Baking powder
  • 0.5 teaspoons Salt
  • 0.75 cups Chopped nuts (e.g., almonds, pecans, or walnuts)
  • 0.5 cups Rainbow sprinkles
  • 2 tablespoons Confectioners’ sugar (optional, for garnish)

Directions

Step 1

Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan. Line the bottom with parchment paper for easy removal.

Step 2

In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.

Step 3

In a large mixing bowl, use an electric mixer to cream the butter and granulated sugar until light and fluffy, about 2-3 minutes.

Step 4

Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.

Step 5

Alternate adding the dry ingredients and milk to the butter mixture, starting and ending with the dry ingredients. Mix just until combined after each addition.

Step 6

Fold in the chopped nuts and 1/4 cup of sprinkles, being careful not to overmix.

Step 7

Pour the batter into the prepared cake pan and smooth the top with a spatula.

Step 8

Sprinkle the remaining 1/4 cup of sprinkles evenly over the top of the batter.

Step 9

Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

Step 10

Remove the cake from the oven and let it cool in the pan for about 10 minutes. Then transfer it to a wire rack to cool completely.

Step 11

Optional: Dust the top of the cake with confectioners’ sugar before serving for an extra touch of sweetness.

Step 12

Slice and enjoy your colorful, nutty cake!
