Ingredients

  • 12 oz Bow tie pasta (farfalle)
  • 1 lb Raw shrimp (peeled and deveined)
  • 3 tbsp Olive oil
  • 3 cloves Garlic (minced)
  • 1 cup Cherry tomatoes (halved)
  • 1 cup Asparagus (trimmed and cut into 1-inch pieces)
  • 3 tbsp Lemon juice (freshly squeezed)
  • 1 tsp Lemon zest
  • 1 tbsp Fresh thyme leaves
  • 0.25 cup Parmesan cheese (grated)
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 0.25 tsp Red chili flakes (optional)
  • 2 tbsp Fresh parsley (chopped)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the bow tie pasta according to package instructions until al dente. Reserve 1/2 cup of the pasta water, then drain the pasta and set it aside.

Step 2

In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the shrimp in a single layer and season with salt and black pepper. Cook for 2-3 minutes per side until the shrimp are pink and opaque. Remove the shrimp from the skillet and set aside.
