Ingredients

  • 12 pieces Rice paper wrappers
  • 24 pieces Cooked shrimp, peeled and deveined
  • 4 oz Rice vermicelli noodles
  • 1 medium Carrot, julienned
  • 1 medium Cucumber, julienned
  • 1 medium Red bell pepper, julienned
  • 1 cup Fresh mint leaves
  • 1 cup Fresh cilantro
  • 0.5 cup Fresh Thai basil leaves
  • 6 leaves Leaf lettuce, torn into pieces
  • 0.5 cup Sweet chili sauce
  • 2 tbsp Soy sauce
  • 1 tbsp Lime juice
  • 1 tsp Sesame oil
  • 2 tbsp Crushed peanuts (optional)

Directions

Step 1

Prepare the rice vermicelli noodles according to package instructions. Drain and set aside.

Step 2

Fill a large shallow dish with warm water. Working one at a time, dip a rice paper wrapper into the water for 10-15 seconds until it starts to soften. Remove from water and lay it flat on a clean surface.

Step 3

Place 2 shrimp on the bottom third of the wrapper. Add a small amount of rice noodles, julienned carrot, cucumber, and red bell pepper. Top with leaf lettuce and a few leaves of mint, cilantro, and Thai basil.

Step 4

Fold the bottom of the rice paper wrapper over the filling. Fold in the sides, then roll tightly to create a compact roll. Repeat with remaining wrappers and filling ingredients.

Step 5

To make the dipping sauce, mix the sweet chili sauce, soy sauce, lime juice, and sesame oil in a small bowl. Stir well to combine. If desired, top with crushed peanuts for extra texture.

Step 6

Serve the prepared spring rolls with the sweet Asian chili dipping sauce on the side.
