Ingredients

  • 6 cups spring mix greens
  • 1 cup fresh strawberries
  • 1 bunch asparagus
  • 0.33 cups slivered almonds
  • 0.33 cups feta cheese
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon honey
  • 1 teaspoon Dijon mustard
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Rinse and dry the spring mix greens. Place them in a large salad bowl.

Step 2

Wash the strawberries, remove the stems, and slice them thinly. Add the sliced strawberries to the bowl.

Step 3

Trim the woody ends off the asparagus and cut the spears into 2-inch pieces.

Step 4

Bring a small pot of water to a boil. Blanch the asparagus pieces for 2-3 minutes, then transfer them immediately to a bowl of ice water to stop the cooking process. Drain and pat dry. Add the asparagus to the bowl with the greens and strawberries.
