Ingredients

  • 8 oz rotini pasta
  • 4 cups spring mix greens
  • 1.5 cups cherry tomatoes
  • 1 large cucumber
  • 0.5 small red onion
  • 0.5 cup Parmesan cheese

  • 2 tablespoons red wine vinegar
  • 1 tablespoon lemon juice
  • 1 teaspoon honey
  • 1 teaspoon Dijon mustard
  • 1 clove garlic
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Bring a large pot of salted water to a boil. Add the rotini pasta and cook according to the package instructions until al dente, about 8–10 minutes. Drain and rinse under cold water to stop the cooking process. Set aside.

While the pasta cooks, prepare the vegetables: halve the cherry tomatoes, peel and thinly slice the cucumber, and thinly slice the red onion.
