Ingredients

  • 400 grams spot prawns, peeled and deveined
  • 1 large ripe mango, diced
  • 1 cup fresh basil leaves
  • 1 medium red bell pepper, thinly sliced
  • 100 grams snow peas, trimmed
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 3 tablespoons soy sauce
  • 1 teaspoon fish sauce
  • 1 tablespoon honey
  • 1 tablespoon lime juice
  • 2 tablespoons sesame oil
  • 2 tablespoons vegetable oil
  • 1 red chili, thinly sliced (optional)
  • 2 cups cooked jasmine rice or rice noodles (for serving)

Directions

Step 1

Prepare the spot prawns by peeling and deveining them if not already done. Pat dry with a paper towel and set aside.

Step 2

In a small bowl, whisk together the soy sauce, fish sauce, honey, and lime juice to make the sauce. Set aside.

Step 3

Heat a wok or large skillet over medium-high heat. Add 2 tablespoons of vegetable oil.

Step 4

Once the oil is hot, sauté the garlic, ginger, and optional red chili for about 30 seconds until fragrant.

Add the spot prawns to the wok and cook for 2-3 minutes, stirring regularly, until they turn pink and are just cooked through. Remove the prawns and set aside.

In the same wok, add the red bell pepper and snow peas. Stir fry for 2-3 minutes until they are slightly tender but still crisp.

Add the diced mango to the wok and gently toss with the vegetables for 1 minute.

Return the cooked spot prawns to the wok and pour in the prepared sauce. Stir well to coat all ingredients evenly.

Turn off the heat and stir in the fresh basil leaves and sesame oil. Let the residual heat wilt the basil slightly.
