Directions

Step 1

In a saucepan, combine the lemon juice, granulated sugar, and water. Heat over medium-low heat, stirring constantly, until the sugar has completely dissolved. Remove from heat and allow the mixture to cool to room temperature.

Once cool, pour the lemon syrup into a shallow freezer-safe container. Place it in the freezer for about 1-2 hours, stirring with a fork every 30 minutes to break up any ice crystals. This will create a slushy, granita-like texture.

When the lemon mixture is nearly frozen, begin preparing the meringue. Using a stand mixer or hand mixer, beat the egg whites on medium speed until soft peaks form.
