  • 1 cup granulated sugar
  • 0.5 cup light corn syrup
  • 0.25 cup water
  • 2 teaspoons baking soda
  • 8 ounces optional chocolate for coating

Directions

Step 1

Prepare a 9x9-inch baking pan by lining it with parchment paper and lightly greasing the paper with non-stick spray or butter. Set it aside.

Step 2

In a heavy-bottomed saucepan, combine the granulated sugar, light corn syrup, and water. Stir gently just to combine, being careful not to splash the mixture up the sides of the pan.

Step 3

Place the saucepan over medium heat and heat the mixture without stirring. Clip a candy thermometer to the side of the pan, making sure the tip is submerged but not touching the bottom of the pan.

Step 4

Allow the mixture to boil until it reaches 300°F (149°C), also known as the hard crack stage. This process will take about 10-15 minutes, and the mixture will turn a light amber color.

Step 5

Once the mixture reaches 300°F, immediately remove the pan from the heat and quickly add the baking soda. Use a whisk to stir the baking soda in, working rapidly but gently. The mixture will foam up significantly—this is normal and creates the 'sponge' texture.

Step 6

Quickly pour the foamy mixture into the prepared baking pan. Do not spread or press the candy down, as this will deflate the bubbles. Let it cool completely at room temperature for about 1 hour.

Once fully cooled, break the sponge candy into bite-sized pieces using your hands or a knife.
